Aloo Gobi (Potato & Cauliflower Curry)

Simple, satisfying dry curry—crispy potatoes and cauliflower with warm spices.


Ingredients (Serves 4 | Prep: 15 min | Cook: 25 min)

  • 2 potatoes, diced

  • 1 small cauliflower, florets

  • 2 Tbsp coconut oil

  • 1 onion

  • 2 tomatoes

  • Garlic

  • Cumin seeds, coriander, turmeric, chili

  • Salt

  • Cilantro


Instructions

  1. Heat oil; add cumin.

  2. Sauté onion/garlic; add tomatoes/spices.

  3. Toss in potatoes/cauliflower.

  4. Cover and cook until tender.


Pro Tips

  • Finish with lemon squeeze.
