Chana Masala (Hearty Chickpea Curry)

This spiced chickpea curry is cozy, filling, and comes together fast—my go-to for weeknights when I want big flavor without fuss.
Ingredients (Serves 4 | Prep: 10 min | Cook: 25 min)
2 cups canned chickpeas, drained & rinsed
2 Tbsp coconut oil or ghee
1 onion, chopped
2 cloves garlic, minced
1-inch ginger, grated
2 tomatoes, chopped
1 tsp cumin seeds
1 tsp ground coriander
1 tsp garam masala
½ tsp turmeric
½ tsp chili powder
Salt to taste
½ cup water
Fresh cilantro

Instructions
Heat oil; add cumin seeds and let them sizzle.
Sauté onion, garlic, and ginger until golden.
Stir in tomatoes and spices; cook until soft.
Add chickpeas and water; simmer 15 min.
Garnish with cilantro.
Pro Tips
Squeeze lemon at the end for brightness.
