These twice-baked Italian classics are perfect for dipping in coffee—crisp, nutty, and endlessly customizable.

Ingredients (Makes ~24 | Prep: 20 min | Bake: 50 min)
2 cups flour
1 cup sugar
1 tsp baking powder
3 eggs
1 cup almonds (toasted)
Zest of 1 lemon
Vanilla extract
Instructions
Mix dry ingredients; add eggs, zest, vanilla.
Fold in almonds; shape 2 logs.
Bake 25 min at 350°F.
Cool, slice, bake slices 10–15 min per side.
