Classic Italian Biscotti (Crunchy Almond Twice-Baked Cookies)

Ingredients (Makes ~24 | Prep: 20 min | Bake: 50 min)

  • 2 cups flour

  • 1 cup sugar

  • 1 tsp baking powder

  • 3 eggs

  • 1 cup almonds (toasted)

  • Zest of 1 lemon

  • Vanilla extract


Instructions

  1. Mix dry ingredients; add eggs, zest, vanilla.

  2. Fold in almonds; shape 2 logs.

  3. Bake 25 min at 350°F.

  4. Cool, slice, bake slices 10–15 min per side.


Pro Tips

  • Use ghee for richer flavor.
