Creamy Nigerian stew with melon seeds, greens, and protein—pair with fufu.

Ingredients (Serves 4)

  • 1 cup ground egusi (melon seeds)

  • Spinach or ugu leaves

  • Protein (beef/fish)

  • Palm or coconut oil

  • Onion, peppers, stock


Instructions

  1. Fry onion in oil.

  2. Add blended peppers, simmer.

  3. Stir in egusi to form lumps.

  4. Add stock, protein, greens; cook 15 min.


Pro Tips

  • Don't stir egusi initially.
