Thin, crispy South Indian crepe stuffed with spiced potatoes—served with sambar and chutney for breakfast or anytime.

Ingredients (Serves 4 | Prep: Ferment overnight | Cook: 30 min)
Batter: 1 cup rice + ½ cup urad dal (soaked, blended, fermented)
Filling: Potatoes, onion, mustard seeds, turmeric, curry leaves
Coconut oil
Instructions
Spread batter thin on hot pan.
Cook until crisp; flip briefly.
Fill with spiced potato mash.
Roll and serve.
