Thin, crispy South Indian crepe stuffed with spiced potatoes—served with sambar and chutney for breakfast or anytime.

Ingredients (Serves 4 | Prep: Ferment overnight | Cook: 30 min)

  • Batter: 1 cup rice + ½ cup urad dal (soaked, blended, fermented)

  • Filling: Potatoes, onion, mustard seeds, turmeric, curry leaves

  • Coconut oil


Instructions

  1. Spread batter thin on hot pan.

  2. Cook until crisp; flip briefly.

  3. Fill with spiced potato mash.

  4. Roll and serve.


Pro Tips

  • Fermentation gives the tang.
