Moroccan Chicken Tagine (Aromatic Slow-Cooked Feast)

Ingredients (Serves 6 | Prep: 20 min | Cook: 2 hrs)

  • 2 Tbsp olive oil

  • 2 onions, sliced

  • 3 garlic cloves, minced

  • 2 lbs chicken thighs

  • 1 tsp each: cinnamon, cumin, turmeric, ginger

  • ½ tsp paprika

  • 1 cup stock

  • 1 cup diced tomatoes

  • 1 cup dried apricots

  • ½ cup raisins

  • ½ cup toasted almonds

  • Carrots, zucchini, chickpeas


Instructions

  1. Sauté onions and garlic in oil.

  2. Brown seasoned chicken.

  3. Add spices, stock, tomatoes.

  4. Stir in fruits, veggies; cover and simmer low 2 hrs.


Pro Tips

  • Couscous soaks up the sauce perfectly.
