Iconic West African party rice—tomato-rich, smoky, and flavorful. Quick version ready in under an hour.

Nigerian Jollof Rice (Spicy One-Pot Wonder)

Ingredients (Serves 4 | Prep: 10 min | Cook: 40 min)

  • 2 cups long-grain rice

  • 4 tomatoes, blended

  • 1 onion, chopped

  • 2 bell peppers, blended

  • ¼ cup coconut oil or ghee

  • Spices: Curry, thyme, bay leaves, scotch bonnet (to taste)

  • Stock, salt


Instructions

  1. Heat oil; fry onion and pepper-tomato puree 10 min.

  2. Add spices, stock; boil.

  3. Stir in rinsed rice; simmer covered 30 min.

  4. Fluff and serve.


Pro Tips

  • Parboil rice for separate grains.
