Nigerian Jollof Rice (Spicy One-Pot Wonder)

Iconic West African party rice—tomato-rich, smoky, and flavorful. Quick version ready in under an hour.

Ingredients (Serves 4 | Prep: 10 min | Cook: 40 min)
2 cups long-grain rice
4 tomatoes, blended
1 onion, chopped
2 bell peppers, blended
¼ cup coconut oil or ghee
Spices: Curry, thyme, bay leaves, scotch bonnet (to taste)
Stock, salt
Instructions
Heat oil; fry onion and pepper-tomato puree 10 min.
Add spices, stock; boil.
Stir in rinsed rice; simmer covered 30 min.
Fluff and serve.

Parboil rice for separate grains.
