Cool, refreshing blended soup—ripe tomatoes, cucumber, and peppers for the ultimate no-cook meal.

Ingredients (Serves 4 | Prep: 15 min + chill)
6 ripe tomatoes
1 cucumber, peeled
1 red pepper
1 small onion
2 garlic cloves
3 Tbsp olive oil
2 Tbsp sherry vinegar
Salt & pepper
Bread for thickening (optional)
Instructions
Roughly chop veggies.
Blend smooth with oil, vinegar, seasoning.
Chill 2 hrs.
Serve cold with garnish.
