Cool, refreshing blended soup—ripe tomatoes, cucumber, and peppers for the ultimate no-cook meal.

Spanish Gazpacho (Chilled Summer Vegetable Soup)

Ingredients (Serves 4 | Prep: 15 min + chill)

  • 6 ripe tomatoes

  • 1 cucumber, peeled

  • 1 red pepper

  • 1 small onion

  • 2 garlic cloves

  • 3 Tbsp olive oil

  • 2 Tbsp sherry vinegar

  • Salt & pepper

  • Bread for thickening (optional)


Instructions

  1. Roughly chop veggies.

  2. Blend smooth with oil, vinegar, seasoning.

  3. Chill 2 hrs.

  4. Serve cold with garnish.

  • Stale bread thickens traditionally.
