Fragrant layered rice with colorful veggies—festive yet simple enough for everyday.
Ingredients (Serves 4 | Prep: 15 min | Cook: 30 min)
1 ½ cups basmati rice
2 Tbsp ghee
1 onion, sliced
Garlic, ginger
Mixed veggies (peas, carrots, beans)
Tomato
2 tsp biryani masala
Turmeric, chili
3 cups broth
Cilantro, mint
Instructions
Sauté onion, garlic, ginger in ghee.
Add veggies, tomato, spices.
Stir in rice and broth.
Cover and simmer 20 min; fluff.
Pro Tips
Layer with fried onions for extra crunch.
