Sour spongy injera bread soaks up vibrant veggie stew—hands-on eating at its best.

Ingredients (Serves 4)
Injera: 2 cups teff flour + water + salt (ferment overnight)
Wat: Onion, carrots, potatoes, cabbage, tomatoes, turmeric, cumin, ginger
Instructions
Mix teff batter; ferment.
Cook thin injera rounds.
Sauté onion; add veggies and spices.
Simmer until tender.
