Filipino Kare-Kare (Rich Peanut Oxtail Stew)

You'll love this creamy, nutty Filipino stew—oxtail slow-cooked in peanut sauce with tender veggies. Comfort in every bite.


Ingredients (Serves 6 | Prep: 20 min | Cook: 2 hrs)

  • 2 lbs oxtail or beef shank, chunks

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 1 eggplant, sliced

  • 1 bunch bok choy or string beans

  • ½ cup natural peanut butter

  • 2 Tbsp toasted rice flour (for thickening)

  • 4 cups beef broth

  • 2 Tbsp fish sauce

  • Salt & pepper

  • Bagoong (shrimp paste) for serving


Instructions

  1. Boil oxtail in water 1–2 hrs until tender; reserve broth.

  2. Sauté onion and garlic in a pot.

  3. Stir in peanut butter and rice flour; gradually add reserved broth.

  4. Add oxtail and eggplant; simmer 15 min.

  5. Toss in bok choy; cook 5 min. Season with fish sauce.
