Creamy ackee fruit with salty cod—bright, savory, and full of island flavor.

Ingredients (Serves 4 | Prep: 20 min | Cook: 20 min)
1 can ackee, drained
½ lb salt cod, soaked overnight
1 onion, sliced
1 bell pepper
1 tomato
Scotch bonnet (to taste)
Thyme, black pepper
Coconut oil
Instructions
Flake soaked cod.
Sauté onion, pepper, tomato.
Add cod and thyme.
Gently fold in ackee; warm through.

Serve with fried dumplings or plantains.
