Ingredients (Serves 4 | Prep: 20 min | Cook: 20 min)

  • 1 can ackee, drained

  • ½ lb salt cod, soaked overnight

  • 1 onion, sliced

  • 1 bell pepper

  • 1 tomato

  • Scotch bonnet (to taste)

  • Thyme, black pepper

  • Coconut oil


Instructions

  1. Flake soaked cod.

  2. Sauté onion, pepper, tomato.

  3. Add cod and thyme.

  4. Gently fold in ackee; warm through.


Pro Tips

  • Serve with fried dumplings or plantains.
