Malaysian Laksa (Spicy Coconut Noodle Soup)

This bowl of heaven is creamy, spicy, and packed with flavor—pure Southeast Asian comfort.

Ingredients (Serves 4 | Prep: 15 min | Cook: 20 min)
8 oz rice noodles
1 Tbsp coconut oil
2 cloves garlic, minced
1 Tbsp ginger
1 red chili
2 Tbsp laksa or curry paste
4 cups broth
1 can coconut milk
Protein (chicken/shrimp/tofu)
Bean sprouts, cilantro, lime
Instructions
Soak noodles.
Sauté garlic, ginger, chili, paste.
Add broth and coconut milk; simmer.
Add protein and noodles; heat through.
Top with sprouts and lime.
