Malaysian Laksa (Spicy Coconut Noodle Soup)

Ingredients (Serves 4 | Prep: 15 min | Cook: 20 min)

  • 8 oz rice noodles

  • 1 Tbsp coconut oil

  • 2 cloves garlic, minced

  • 1 Tbsp ginger

  • 1 red chili

  • 2 Tbsp laksa or curry paste

  • 4 cups broth

  • 1 can coconut milk

  • Protein (chicken/shrimp/tofu)

  • Bean sprouts, cilantro, lime


Instructions

  1. Soak noodles.

  2. Sauté garlic, ginger, chili, paste.

  3. Add broth and coconut milk; simmer.

  4. Add protein and noodles; heat through.

  5. Top with sprouts and lime.


Pro Tips

  • Adjust chili for your heat level.
