Moroccan Chicken Tagine (Aromatic Slow-Cooked Stew)

This fragrant one-pot wonder fills your kitchen with cinnamon and cumin—tender chicken with sweet dried fruits.


Ingredients (Serves 6 | Prep: 20 min | Cook: 2 hrs)

  • 2 Tbsp olive oil

  • 2 onions, sliced

  • 3 garlic cloves, minced

  • 2 lbs chicken thighs

  • 1 tsp each: cinnamon, cumin, turmeric, ginger

  • ½ tsp paprika

  • 1 cup stock

  • 1 cup diced tomatoes

  • 1 cup dried apricots

  • ½ cup raisins

  • ½ cup toasted almonds

  • Carrots, zucchini, chickpeas


Instructions

  1. Heat oil; sauté onions and garlic.

  2. Brown seasoned chicken.

  3. Add spices, stock, tomatoes, fruits, veggies.

  4. Cover and simmer low 2 hrs until sauce thickens.
