This fragrant one-pot wonder fills your kitchen with cinnamon and cumin—tender chicken with sweet dried fruits.
Ingredients (Serves 6 | Prep: 20 min | Cook: 2 hrs)
2 Tbsp olive oil
2 onions, sliced
3 garlic cloves, minced
2 lbs chicken thighs
1 tsp each: cinnamon, cumin, turmeric, ginger
½ tsp paprika
1 cup stock
1 cup diced tomatoes
1 cup dried apricots
½ cup raisins
½ cup toasted almonds
Carrots, zucchini, chickpeas
Instructions
Heat oil; sauté onions and garlic.
Brown seasoned chicken.
Add spices, stock, tomatoes, fruits, veggies.
Cover and simmer low 2 hrs until sauce thickens.
