Indian Vegetable Biryani (Fragrant Layered Rice)

Aromatic basmati with spiced veggies—festive yet simple enough for any night.

Ingredients (Serves 4 | Prep: 15 min | Cook: 30 min)
1 ½ cups basmati rice
2 Tbsp ghee
1 onion, sliced
Garlic, ginger
1 cup mixed veggies
2 tomatoes
2 tsp biryani or garam masala
½ tsp turmeric, chili
3 cups broth
Cilantro, mint
Instructions
Sauté onion, garlic, ginger in ghee.
Add veggies, tomatoes, spices.
Stir in rice and broth.
Cover and simmer 15 min; fluff with herbs.
Pro Tips
Fried onions on top add crunch.
