Indian Vegetable Biryani (Fragrant Layered Rice)

Ingredients (Serves 4 | Prep: 15 min | Cook: 30 min)

  • 1 ½ cups basmati rice

  • 2 Tbsp ghee

  • 1 onion, sliced

  • Garlic, ginger

  • 1 cup mixed veggies

  • 2 tomatoes

  • 2 tsp biryani or garam masala

  • ½ tsp turmeric, chili

  • 3 cups broth

  • Cilantro, mint


Instructions

  1. Sauté onion, garlic, ginger in ghee.

  2. Add veggies, tomatoes, spices.

  3. Stir in rice and broth.

  4. Cover and simmer 15 min; fluff with herbs.


Pro Tips

  • Fried onions on top add crunch.
