Italian Risotto alla Milanese (Saffron Rice)

Ingredients (Serves 4 | Prep: 10 min | Cook: 30 min)

  • 1½ cups Arborio rice

  • 4 cups hot broth

  • Pinch saffron

  • 1 onion, finely chopped

  • ½ cup white wine

  • ½ cup Parmesan

  • Butter/ghee


Instructions

  1. Sauté onion in butter.

  2. Add rice; toast 2 min.

  3. Pour wine; stir until absorbed.

  4. Add broth ladle by ladle, stirring, 20 min.

  5. Finish with cheese.


Pro Tips

  • Constant stirring = creaminess.
