Creamy, golden risotto with saffron—elegant yet kid-approved comfort.

Ingredients (Serves 4 | Prep: 10 min | Cook: 30 min)
1½ cups Arborio rice
4 cups hot broth
Pinch saffron
1 onion, finely chopped
½ cup white wine
½ cup Parmesan
Butter/ghee
Instructions
Sauté onion in butter.
Add rice; toast 2 min.
Pour wine; stir until absorbed.
Add broth ladle by ladle, stirring, 20 min.
Finish with cheese.

Constant stirring = creaminess.
