Creamy beans slow-simmered with sausage over rice—Monday tradition made easy.

Ingredients (Serves 6 | Prep: 15 min | Cook: 1–2 hrs)
1 lb red beans (soaked)
Andouille sausage
Onion, bell pepper, celery
Garlic, bay leaves, thyme
Rice for serving
Instructions
Sauté holy trinity + sausage.
Add beans, spices, water.
Simmer until creamy.
