Mexican Arroz con Pollo (Chicken & Rice One-Pot)

Ingredients (Serves 6 | Prep: 15 min | Cook: 45 min)

  • 1 lb chicken thighs

  • 2 cups long-grain rice

  • 1 onion, chopped

  • 2 garlic cloves

  • 1 bell pepper

  • 2 cups chicken broth

  • 1 cup diced tomatoes

  • 1 tsp cumin, paprika

  • Peas, carrots

  • Olive oil, salt


Instructions

  1. Brown chicken in oil; set aside.

  2. Sauté onion, garlic, pepper.

  3. Add rice, spices; toast 2 min.

  4. Stir in broth, tomatoes, veggies; nestle chicken.

  5. Cover and simmer 30 min.


Pro Tips

  • Frozen peas add pop of color.
