Mexican Arroz con Pollo (Chicken & Rice One-Pot)

Tender chicken and fluffy rice simmered with tomatoes and spices—comforting family favorite ready in one pan.

Ingredients (Serves 6 | Prep: 15 min | Cook: 45 min)
1 lb chicken thighs
2 cups long-grain rice
1 onion, chopped
2 garlic cloves
1 bell pepper
2 cups chicken broth
1 cup diced tomatoes
1 tsp cumin, paprika
Peas, carrots
Olive oil, salt
Instructions
Brown chicken in oil; set aside.
Sauté onion, garlic, pepper.
Add rice, spices; toast 2 min.
Stir in broth, tomatoes, veggies; nestle chicken.
Cover and simmer 30 min.
Pro Tips
Frozen peas add pop of color.
