Humble, hearty comfort—earthy lentils and rice crowned with sweet onions.

Ingredients (Serves 4 | Prep: 15 min | Cook: 40 min)
1 cup green/brown lentils
1 cup rice
3 onions, sliced thin
¼ cup olive oil
Cumin, salt
Yogurt (optional serve)
Instructions
Cook lentils until tender.
Caramelize onions slow in oil.
Add rice to lentils with water; cook.
Top generously with onions.
Pro Tips
Yogurt dollop cools the spices.
