Ingredients (Serves 4 | Prep: 15 min | Cook: 15 min)

  • 3 cups day-old rice

  • 1 cup pineapple chunks

  • ½ lb shrimp

  • Cashews, raisins

  • Curry powder, soy, fish sauce

  • Green onions, cilantro


Instructions

  1. Stir-fry shrimp; set aside.

  2. Sauté curry powder, add rice.

  3. Mix in pineapple, nuts, sauces.

  4. Return shrimp; garnish.


Pro Tips

  • Serve in pineapple half for wow.
